Simple Vegetable Curry
This simple vegetable curry is a quick and easy meal you can cook in minutes on the hob, using basic whole ingredients. You can even put it in a slow cooker and arrive home with the smell of an aromatic curry greeting you on your return from work.
What you need to cook a simple vegetable curry
Ingredients:
One tablespoon of olive oil
One leek or medium onion (sliced)
One tablespoon of thickening flour (corn flour, gram flour)
Two tablespoons of medium curry powder
500 ml Bouillon stock
One 400g canned green lentils (drained and rinsed)
400g frozen vegetables
One teaspoon of brown sugar
One tablespoon of desiccated coconut
Pepper to taste
How to cook a simple vegetable curry
Method:
Step 1: Heat the oil in a medium saucepan, medium heat, and add the leek/onion. Sautee for two minutes.
Step 2: Add 100ml of the Bouillon stock, the curry powder, and the flour. Stir to make a paste.
Step 3: When a paste has formed, add in the rest of the ingredients.
Step 4: Cover and simmer for twenty minutes, stirring occasionally. Add more flour to thicken.
Step 5: Serve on a bed of rice or pour over a baked potato.
Slow Cooker
This curry can be cooked in a slow cooker. Just place all the ingredients in the dish and switch on – high setting for 4-5 hours, low setting for 8 hours.

In all fairness this photo doesn’t do this curry justice. I’m afraid I was so hungry, and it smelt so good I started to eat it. After a few mouthfuls I remembered, scooped up the rice and curry to make it look (as best I could) as if I hadn’t eaten any. At least I tried!
