How to cook a simple vegetable curry

Method:

Step 1: Heat the oil in a medium saucepan, medium heat, and add the leek/onion. Sautee for two minutes.

Step 2: Add 100ml of the Bouillon stock, the curry powder, and the flour. Stir to make a paste.

Step 3: When a paste has formed, add in the rest of the ingredients.

Step 4: Cover and simmer for twenty minutes, stirring occasionally. Add more flour to thicken.

Step 5: Serve on a bed of rice or pour over a baked potato.

Slow Cooker

This curry can be cooked in a slow cooker. Just place all the ingredients in the dish and switch on – high setting for 4-5 hours, low setting for 8 hours.

Here’s a few things you could add…

You could add a few sliced mushrooms or courgette for extra crunch, taste and nutrients.

Sometimes I add a tablespoon of nutritional yeast for extra vitamins and nutrients, including protein and B12

And Voila! A simple vegetable curry

In all fairness this photo doesn’t do this curry justice. I’m afraid I was so hungry, and it smelt so good I started to eat it. After a few mouthfuls I remembered, scooped up the rice and curry to make it look (as best I could) as if I hadn’t eaten any. At least I tried!
